Venison Zappa Toscana Soup

This is a delicious soup to make with your favorite venison sausage. It’s sure to be a hit to all that you serve it to, or you could just eat it all yourself!
This soup is AMAZING!

What you will need:

1 lb venison sausage

4-5 cooked slices bacon, chopped

4 russet potatoes, diced

1 onion, chopped

1 tbsp minced garlic

6 oz. white wine

1/2 box frozen, chopped spinach

1 cup half and half (light or heavy cream works too!)

2 tbsp flour

2 cans chicken broth (14-1/2 ounce cans)

1 tbsp dried Italian seasonings

Salt / White pepper / Cayenne pepper to taste

What you need to do:

Cook bacon in soup pot – remove when crisp – chop and set aside

Brown sausage in same pot with bacon drippings

Add onions, salt/pepper and Italian seasonings and cook a few minutes until softened

Add garlic, and cook a few minutes. Sprinkle with flour and continue to cook while stirring for a few more minutes

Slowly add wine, scraping up the bottom of the pan and mix well

Add one can of chicken broth while stirring, then add the next can while continuing to stir

Bring to a boil – Add potatoes and cook until tender

Add 1/2 box squeezed out spinach and cream – mix well and bring back to a simmer and shut it off.  Don’t let it boil!

Mix in bacon and EAT!
