This is the beer batter recipe I am using when we cook up our wild turkey nuggets. It’s a basic recipe that can always be adjusted to suit your taste.
1 cup flour
2 tbs garlic powder
2 tbs paprika
2 tsp ground black pepper
1 tsp salt
Mix the ingredients above well, then add 1 large egg and approx. 12 fluid ounces of your favorite beer. (I used Long Trail IPA.) Add enough to thin the batter out to a “runny” consistency.
Cut turkey breasts into 1-1/4 cubes and season with salt and pepper. Dredge nuggets in raw flour first, then dip into beer batter. Carefully place them in hot oil and fry until golden brown, turning once. Approximately 2-3 minutes per side. Serve with french fries and your favorite dipping sauce!
